Passion Fruit and Coconut Tart with Shelter Chardonnay 2022
In the thick of winter, there’s nothing like a burst of tropical flavours to brighten your day. A tangy, sweet passion fruit and coconut tart offers the perfect escape. This dessert, packed with vibrant flavours and a crunchy biscuity crust, is the perfect way to add sunshine to your winter evenings. Pair it with a glass of Shelter Chardonnay 2022 to elevate the experience. This wine’s structure, freshness, and depth beautifully complement the tart’s acidity and richness, enhancing the overall harmony of flavours.
Why Pair Passion Fruit and Coconut Tart with Shelter Chardonnay 2022?
The Shelter Chardonnay 2022, made in an oxidative manner, provides a structure that perfectly balances the tart’s bright and creamy elements. The wine’s acidity cuts through the tart’s richness without detracting from its flavours, while the crunchy crust bridges the wine’s spice tones. This interplay of textures and flavours keeps the palate engaged with each sip and bite.
Passion fruit and coconut form a fragrant combination, blending bright tartness with milky, sweet, and coco-nutty notes. The addition of cashews introduces a touch of decadence, all encased in a biscuity pastry that delivers a delightful crunch. Paired with Shelter Chardonnay 2022, this tart becomes a symphony of balanced flavours and textures.
Chef Notes:
Even in winter, passion fruits can bring a taste of summer to your table! To create the seedless passion fruit puree for the tart, scoop out the inner fruit, transfer it to a blender, and pulse for a few short seconds to loosen the pulp from the seeds. Pour the mixture into a sieve set over a bowl, pressing it through with the back of a spoon, leaving the seeds behind. The result is a silky, sweet passion fruit puree.
Optionally, you can add baobab powder for an extra layer of tanginess and a nutritious dose of immune-boosting vitamin C. This addition is entirely optional and can be omitted without significantly altering the flavour.
Enjoy this delightful tart with a slick of whipped cream or some lightly torched Italian meringue. I’ve opted for sweetened vanilla coconut cream, but as always, the choice is yours.
The Shelter Chardonnay 2022’s structured, fresh profile enhances the tart’s vibrant flavours, creating a delightful culinary experience perfect for cosy winter evenings. Enjoy this harmonious pairing and let the season’s flavours come alive in your kitchen.
